The artichoke (Cynara cardunculus (L.) subsp. scolymus) is a herbaceous plant of the Compositae family. It is a robust plant, with large bluish-green rosette leaves. From the stem, about two hands long, grow one or two flower heads, the artichokes, covered with hard bracts. The flowers are blue-purple and tubular. The tender and edible part is found inside the heads, but in phytotherapy the youngest leaves are used, which are the ones that contain the bitter active ingredients that will have health benefits.
