Maple syrup is a plant-based alternative to honey. It is known for the master cleansing diet and of course as a pancake syrup. However, this sweetener is much more than that. You can cook and bake with it (macrobiotic) and use it as a base for dressings, sauces and ice cream. Maple comes from the maple tree. It produces a sugary juice every year. We drain that in the Canadian spring and boil it in syrup.
